What's for Iftar?

Salam All, we had nasi ulam Utara's version for iftar yesterday. A very healthy choice isn't it not? Ada berbagai jenis ulam kalau ikut versi ori kena ada berpuluh-puluh species ulam but hok ni cuma dapat 7 jenis ulam hijau, bawang, halia, serai, bunga kantan, kerisik kelapa, udang kering, ikan kering dan lada hitam...semua dihiris halus.
Tada....

Makan ni kena 'gu' dengan masak assam keladi! So that's our iftar menu yesterday!

Colorful Ayam Belanda

New Year Eve, i decided to roast Turkey for dinner...yes, ayam belanda/ayam piru dalam bahasa baku...hehee. Anyway this is my first time roasting this big bird. Selalunya, my FIL yang masak, kami semua makan aje. We decided to have it at my little condo yang dah almost sebulan i tak pi visit! So that day early dinner sebab later nak pergi watch fireworks.
So I bought this Halal frozen Turkey from Carrefour in Midvalley about a week before.
Vogel sudah itu birdie, after almost one whole night thawing and now ready to marinate. Marination ingredients i used, butter, honey, olive oil, dried rosemarry herbs, crushed black peppers and salt. I lumuq semua sekali satu badan, tiada adegan sumbat-menyumbat di sini sebab I decided to do the stuffing separately.
Ready for the oven! Roasting time approximately 3.5 hrs. at 175c.

Setelah lama menunggu, akhirnya jeng..jeng..jeng presenting star-of-the-day, owh...i didnt flap back the wings tu yang burnt skit...burnt skit tu la yang marveles...wings ada dua je...ni yang jadi rebutan!
I also roasted some potatoes, sweet potatoes, carrots, onions and garlic. Mama did the super delish gravy to go with the turkey!

I've made tomato soup too....from scratch ye puan-puan/tuan-tuan not from the can...cewah!
Sis Ita just came back from Kuching the day before so she brought this...super moist and yumz!

Owh, also celebrating my sis liza's son birthday, Aiman and My cousin, Sis Ita! Happy birthday darlings!

Masak Assam Tempoyak Rebung with Ikan Senangin

2 weeks before Ramadhan my parents went back to Kuala Kangsar and brought me this...
2 full plastic container of the glorious 'Tempoyak'. This tempoyak made from a very good quality durian. Knowing my uncle, we called him Pak 'u' will not supply us a low quality one. Unlike some people, can't stand the smell of durian...poor you people...rugi taw tak makan durian! Yours truly on the hand loves durian and yes my little misses pun suka.
So a few days before Ramadhan my office colleagues organised a pot luck brunch and yours truly brought to work...masak assam tempoyak with rebung! It was a big hit hehee.
This is how i did it.
Pound red chillies (remove seeds), chilli padi, kunyit hidup (tumeric), sugar and salt or you can blend them in a blender...lagi senang!
Pound items with 2 lemongrass (ketuk sikit serai tu ye), cut rebung siam (bamboo shoots).
Saya guna rebung siam yang ini, kalau tak suka boleh la gantikan dengan timun tua or taugeh yang besar tu.
Add them in the pot. I use about 4 tablespoons of tempoyak and add water. Let it simmer on the stove.
Then add the fish and bamboo shoots. Let it cook for a bit.

Done!
Best eaten with rice, ikan masin tenggiri jeruk and sambal belacan...yumz..yumz...'mother-in-law pass by also cannot see'!...hahaa...and its my little diva's favourite dish!...but she don't eat the bamboo shoots la!

Alhamdulillah, yesterday first day of Ramadhan both my girls managed to fast. Iftar yesterday we had nasi lemak with sambal sotong. What's for iftar today? Tak nak try masak assam tempoyak?...pssstt..Ms. S care for tempoyak?

Colorful Sindhi Biryani

Yours truly decided to cook biryani. So last monday, i cooked chicken biryani using Shan's Sindhi Biryani spice mix that i bought at Mustafa Centre in Singapore months ago. Apparently you can find Shan's Briyani Mix in any Cold Storage Stores in KL/PJ.
The ingredients i used. So just you know i did not follow exactly the cooking instructions written on the box, this is my version...heheee...log on here to know the exact way!
Stir fry the onions and garlic paste with ghee until golden brown then add cut chicken and ginger paste. Cook for about few minutes.

Then i add the small chillies (cili padi), yogurt and Shan's Sindhi Biryani Mix and let it simmer for about 5 minutes and then add about 1/2 cup of plain water.
You add in the tomatoes, coriander leaves and mint leaves and let it cook for a while but don't overcooked the tomatoes and the leaves because we need to add in the cooked basmati in it later...it's nice to have the mint and coriander leaves bau in the rice!

In the rice cooker i cooked 5 cups of basmati rice. When the rice cooked i add to the mix in the pot and let it cook in the pot of a bit and whalla lunch is served.
Sedap! Best eaten with salad and cili kicap - light soya sauce, vinegar, cut cili padi and sliced onions!

Colorful Chicken

Hari tu kan i masak Chicken Cooked in Soya Sauce erti kata lain Ayam masak kicap. Mana boleh asyik Superheroes & MOM je yang tayang ayam masak kicap dia hehee...i pun nak tayang mine! Yours Truly's A.M.K. is slightly different recipe dia. Normally i marinate the cut chicken with dark & light soya sauce and chopped garlics, leave for like half an hour then fry the chicken. Separately i make the sauce using back the leftover soya sauce from the marinated chicken adding garlic, ginger, cardamon seeds, 1 cinnamon stick and star anise.
Ni hot-hot dah take picture tu yang blurry tu...cam ada special effect kan hahaa.
There you go our lunch that day!
